my mommy loves popcorn. its her second favorite food after ice cream.  unfortunately i am not a fan of popcorn (unless it is mailed in one of those unhealthily large and festive popcorn tubs) – so when i have a movie date with my mommy, i have always struggled with a good and healthy alternative.  until now!  roast edamame!

the thought of roast edamame may not sound appealing to some people, but it works surprisingly well!  after roasting, edamame become nutty, and crunchy on the outside, and chewy on the inside, and completely addictive.

recipe: roast edamame (adapted from the kitchn)

ingredients:

16 ounces frozen shelled edamame (defrosted).
2 teaspoons extra-virgin olive oil.
1 teaspoon sea salt.
1/2 teaspoon freshly cracked black pepper.
(or 1-2 teaspoons alternate seasoning if desired.)

directions:

1.  preheat oven to 375 degrees fahrenheit, and line sheet pan with parchment paper.

2.  strain defrosted edamame and spread on tea towel and pat dry.

3.  toss edamame in bowl with olive oil, sea salt, and pepper before layering on sheet pan in an even layer.

4.  roast in oven 30-40 minutes, tossing frequently, until golden brown.

5.  eat and enjoy!*

* best enjoyed same day, but can be kept refrigerated and reheated in oven.
